Paleo Coconut Porridge


We eat a lot of bacon and eggs around here.  I'm pretty happy with eating the same thing every day for breakfast.  I think I'm not awake enough to care, as long as my tummy gets something to fill it up.  Craig, however, starting requesting that maybe, sometimes, we could have something else for breakfast.

We eat this yummy grain-free porridge probably twice a week now (leaving 5 days for bacon?), usually with a bowl of greek yogurt and fruit as well.  Ria loves it, and will polish off a decent bowl with no prompting.  Sunny is a fan as well but I have to spoon feed it to her, and neither of us are very good at that :p.  It tasted a bit like a coconut and oatmeal cookie, but is sugar free and high in protein to start your day well.


Paleo Coconut Porridge

Adapted from Practical Paleo by Diane Sanfilippo

This serves three adults or a family with two adults, a toddler and a baby :)

Ingredients
1 cup milk (we use whole milk, but full fat coconut milk is great if you don't do dairy)
3/4 cup shredded unsweetened coconut
1 medium apple, shredded
6 tablespoons almond butter
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon powdered ginger
1/8 teaspoon cloves
pinch of salt

Directions
This is beyond easy to make.  Combine in a small/medium saucepan and heat over medium heat (stirring) until it's as warm as you like it.
